This balance – or the search for it will help us choose better and feel more grounded at the end of the day with easy weeknight dinners. Freeing up time at the end of the day also ensures you have the mindspace to follow your passion – whether it’s learning a new instrument or catching up on your favourite TV show! Kathi Roll: For The Desi One

How can we ever go wrong with a Kathi Roll? Originally from Kolkata, this skewer-roasted kebab is all about flavour, spice, and heat. To make it your own in less than 15 minutes, all you need to do is choose between Mutton Seekh Kebab and Chicken Seekh Kebab. To prepare; Parathas as per how many rolls you want to make (Looking for something healthier? Opt for Ragi Paratha) Green Chutney Meatington’s Cook & Eat Seekh Kebabs Onions cut in rounds Coriander Chaat Masala In one pan, cook your Seekh Kebabs. As they are close to being done, toss a paratha onto a second pan, apply green chutney at its base, and then add the Seekh Kebab on top! Garnish it with onions and coriander with some chaat masala and you’re set for a healthy yet hearty meal that barely takes any time. P.S. This is perfect for college students who may not have access to a full kitchen too!

Chicken Herb Breast: For The Experimenter

Looking for something exotic? You can’t go wrong with a European-style Chicken Herb Breast! This boneless preparation goes from pan to plate in 7 minutes – your side salad will probably take longer to toss! We love adding a bit of kick to our Weeknight Dinner, though, which is why we swear by this Chicken Herb Breast in Mustard Cream Sauce & Veggies. Very French, very fancy – perfect for when you want to feel special during the week but don’t have the time! Here’s what you will need: Meatington’s Chicken Herb Breast Olive Oil Oregano, Salt, and Pepper Cream Mustard Chicken Broth All you have to do is create a sauce from the mustard, cream, and chicken broth, add the seasoning, and coat your Chicken Herb Breast while it’s cooking – and it’s ready to eat – as simple as that. You can choose to have a simple side salad or even some garlic bread with it – and maybe a cheeky glass of wine?!

3. Mushroom Galouti: For The Fussy Eater

Melt-in-the-mouth, absolutely decadent – of course, we are talking about Galouti Kebabs! In their original avatar, they bring to mind the elegance of an era past – but, we decided to change them up for Weeknight Dinner. Cue: Galouti Burgers… You will need Meatington’s Mushroom Galouti Burger Buns Tomatoes Onions Cucumbers Mayo Simply Heat & Eat the Mushroom Galouti and then assemble it with the bread and condiments. It does not get simpler than this – and will also ensure that the little ones don’t throw up a fuss! If a burger is too big for them, why not opt for a mini one? That way you can take care of portions while letting them into the fun as well.

Prawns Marinated with Basil Chilly: For The Spicy One

Have some leftover rice? Craving some Chinese? Well, just Cook & Eat our Prawns Marinated with Basil Chilli and you have a feast on your hands! This easy weeknight dinner will barely take half an hour to make – but when it’s ready, we’re sure you will never opt for a roadside (read: unhealthy) Chinese takeout ever! All you need… Prawns Marinated with Basil Chilly Finely chopped onions and garlic An egg, if preferred Rice (can be day-old as well) Oil Simply start by cooking your Prawns Marinated with Basil Chilly. In a separate pan, sauté your onions and garlic and scramble an egg. Once these core preparations are ready, just add the rice to the onion, garlic, and egg mix and prawns on top. Give it a good mix – and you’re ready! Quick, delicious, and healthy all at one go. Isn’t that the best of both worlds?!

5. Falafel: For The Salad-Seeker

Seeking a healthy weeknight dinner, with a proper balance of carbs, fats, and protein? Well, look no further than our Falafel. Whether you choose to pan-fry them, or deep-fry them, they pack a lot of protein! Opt for a Falafel Salad Bowl, which will ensure you get your veggies in at the same time. To prepare; 1. Meatington’s Falafel 2. Lettuce 3. Tomatoes 4. Cucumbers 5. Olives 6. Onions 7. Hummus 8. Olive Oil 9. Vinegar 10. Salt & Pepper 11. To start off, make a simple vinaigrette dressing with Olive Oil, Vinegar, and Salt and Pepper. Use this to toss your salad and veggies in. Assemble the bowl next. Add a dollop of Hummus and your pan-fried or deep-fried Falafels on top. As simple as that – and as delicious as you can imagine! And that’s it – 5 easy weeknight dinners for all 5 days of the week!
